Bizzare Food: Casu Marzu

I love cheese but Casu Marzu is one cheese I will not eat nor even touch. A delicacy in Sardinia, Italy, the cheese is made from sheep’s milk that has been cured and then exposed to flies with the purpose of having them lay their larva in it. The cheese is given a “unique flavor” and a very soft texture after having passed through the larvas’ digestive process. Considered unsafe if eaten with dead larva, it is eaten with thousands of live larva. Although outlawed in Europe (for health reasons), adventurous foodies and long time aficionados can find Casu Marzu in Sardinia. I don’t know how well diners in America will receive this exotic delicacy but I would l like to see Andrew Zimmerman or Anthony Bourdain try it.
